We all need an army of easy, go-to recipes that we can throw together in a pinch. Mine is broiled salmon- I keep big stashes in the refrigerator that are vacuum sealed in individual portions, defrost them in the morning (or throw them in a bowl of hot water for 15 minutes if I didn't plan that far ahead, which is often), and 9 times out of 10 broil it in the oven.
You can use any oil you like here, provided it is suited to high heat cooking (again- no olive oil! olive oil burns and oxidizes in high heat. I only bake using ghee, coconut oil, avocado oil, macadamia nut oil). My other favorite is red palm oil, as it really enhances the vibrant orange flesh of the salmon. Red palm oil has a dark orange pigment, which means it possesses powerful antioxidants called beta-carotenes- plus it has a high smoke point. But, you MUST use a sustainable, organic brand- commercial palm oil is one of the most environmentally damaging and exploitive crops on the planet. vote with your dollar! I love Nutiva brand.
4oz piece of wild salmon
1 tsp red palm oil (or coconut, ghee or avocado oil)
1 tsp fresh or dried thyme
1 garlic clove, minced
sprinkle of garlic powder
sea salt & black pepper
TO MAKE //
turn on the broiler in your oven to medium-high heat.
meanwhile, drizzle your salmon with oil, sprinkle with garlic and garlic powder, herbs, salt and pepper.
broil salmon about 5 inches underneath the broiler for 15 minutes. watch closely- you want the salmon to brown on top but not burn, and cook through. Let rest for 3 minutes and serve!
